This recipe is perfect for the slow cooker. Simple and goes together quickly. Everyone in your household is sure to love it!

  • 2 Pounds Lean ground beef
  • 1 oz Envelope of dry onion soup mix
  • 1/2 C Italian seasoned bread crumbs
  • 1 Egg
  • 1/4 C Milk
  • 1/4 C All-Purpose Flour
  • 2 TBSP Vegetable oil
  • (2) 10 oz cans of Condensed Cream of Chicken soup
  • 1 oz packet of dry au jus mix
  • 3/4 C Water
  • 2-3 Medium Vidalia or yellow onions
  • 1/2 C Sliced mushrooms
  • 3-4 Potatoes
  1. Mix the ground beef, egg, milk, onion soup mix, bread crumbs, and milk in a large bowl with your hands until well mixed.

  2. Heat the oil in a large skillet over medium-high heat.

  3. Dredge the patties in flour just to coat, and quickly brown on both sides in the hot skillet.

  5. Combine the cream of chicken soup, Au Jus mix, and water in a medium bowl. Pour over the meat and cook on a low setting for 4-5 hours or until the ground beef is well done.

  6. During the last 90 - 120 minutes of cooking time, melt a few tablespoons of butter and an equal amount of vegetable oil in a pot. Thinly slice the onions and add to the pot. Add a pinch or two of salt, stir. Cook over medium heat for approximately an hour. Add a pinch or two of brown sugar and the mushrooms. Cook for 30-60 minutes until the onions are golden brown (caramelized)

  7. During the last hour of cooking, wash the potatoes. If you prefer to peel them, go ahead and do so. Cube, and place into a pot of water. Bring to a boil. Cook 45-60 minutes. Drain. Add a splash of milk, a dollop of sour cream if you like, and some butter. Mix until creamy. There should be a few lumps.

Recipe Notes

To serve:

Place 1-2 scoops of mashed potatoes onto the plate and top with a Salisbury steak patty. Spoon some of the gravy from the crock pot on top, then top with the caramelized onions and mushrooms mixture.

This would also be really good with some green onions or chives on top or mixed into the mashed potatoes.
