EASY TARRAGON CHICKEN
Enjoy the savory flavors of tarragon, chives and butter with chicken and asparagus. Quick and easy to make.
- 1 Pound Asparagus Halved, if desired
- 2 TBSP Olive oil Divided
- 4 4 oz. Chicken breast halves
- 1 tsp Seasoning salt
- 2 tsp butter
- 2 tsp Tarragon Fresh, chopped
- 2 tsp Chives Fresh, chopped
- 3/4 C Chicken broth
- 1/4 C Non-fat Greek Yogurt
In a skillet over medium heat, cook asparagus in 1/4 C water for 4 minutes. Add 1TBSP oil, cook for an additional 2 minutes. Remove from skillet and keep warm.
Season chicken with seasoning salt. In the skillet, cook chicken in remaining olive oil for 8 minutes or until inserted thermometer reads 165° F, turning once. Remove from skillet.
In the skillet, cook next 3 ingredients for 30 seconds. Add broth; cook 5 minutes or until reduced to 3 TBSP. Stir in yogurt. Serve with chicken and asparagus.
